Magnificent Mango Tomato Salsa

These bright flavors are always welcome at parties, whether you're hosting or a guest.

Directions:

  1. In a serving bowl add mango, tomatoes, onion and chile and gently toss to mix.
  2. Add lime, sugar, vinegar, cilantro, mint, salt and pepper. Gently stir mixture to combine well. Serve at room temperature.

Ingredients:

  • 1 cup mango, peeled, finely diced
  • 2 plum tomatoes, finely diced
  • 2 Tbsp. red onion, minced
  • 1 tsp. serrano or jalapeno chile, minced
  • 1 Tbsp. lime juice, freshly squeezed
  • 1/2 tsp. sugar
  • 1/2 tsp. rice wine vinegar, unseasoned
  • 1 Tbsp. cilantro, fresh, chopped
  • 2 tsp. mint, fresh, chopped
  • Salt and freshly ground pepper, to taste

Whole-Grain Pasta Salad

Simple, seasonal ingredients make this pasta salad a satisfying meal or side dish.

Directions:

  1. For the dressing, in a bowl add oil, vinegar, salt and pepper. Whisk to combine and set aside.
  2. For the salad, in a large serving bowl add strawberries, apples and spinach. Gently stir to combine. Add warm pasta and stir to combine. Pour the dressing over top and gently stir to combine and coat well. Sprinkle with cheese, for garnish.

  • 1/3 cup olive oil
  • 1/4 cup balsamic vinegar
  • Salt and pepper to taste

  • 1 pound whole-wheat penne pasta, cooked, warm
